The same Tomita stainless steel moves indoors. A Japanese bread knife with a wave-serrated edge cuts crusty loaves without crushing them, and the nata hatchet splits bamboo and kindling outside.

Two bread knives

The NJP3010 has a 12-inch blade for big loaves and roasts; the No. 3000 is shorter, about 210 mm of edge, for everyday bread and cakes. Both have a wave serration that bites into crust and glides through crumb.

The nata

The No. 4165 bamboo nata has a 165 mm mirror-finished stainless blade hardened to HRC58, with a sheath and a wrist strap. It is the Japanese tool for bamboo, canes and brush.

Can a bread knife go in the dishwasher?

Hand wash and dry it straight away; dishwashers are hard on wood handles and edges.

How do I sharpen a serrated bread knife?
